Com a ajuda de um pegador de alumínio, coloque diretamente cada tomate sobre a chama alta do fogão. Deixe a pele queimar por completo – até que se desprenda da polpa. Espere esfriar, descasque e despreze a pele tostada. Abra os tomates, retire as sementes e desmanche a polpa com as mãos. Quando a calda dourar, apague o fogo e, com a ajuda de uma colher, espalhe-a por toda fôrma. Pudim: Na batedeira, bata as claras em neve. Sem parar de bater, vá polvilhando o açúcar aos poucos até obter o ponto de suspiro. Com uma colher, coloque o suspiro na fôrma caramelizada, apertando delicadamente para evitar a formação de ar. Leve ao forno brando, em banho-maria, por cerca de 40 minutos ou até o pudim ficar levemente corado. Desligue o forno, deixando a fôrma dentro dele por uns 10 minutos com a porta entreaberta para que a mudança brusca de temperatura não murche o suspiro. Desenforme com cuidado, passando a faca nas bordas da fôrma. Creme: Numa panela, coloque o leite, misture o amido de milho, o açúcar, as gemas e mexa bem. Leve ao fogo brando, sem parar de mexer. Quando começar a ferver, adicione a baunilha, misture e retire do fogo. Enquanto esfria, mexa de vez em quando. Sirva com o pudim. Calda de morangos: Numa panela, coloque o vinho tinto, o do Porto e o açúcar. Deixe ferver. Junte os morangos lavados e cortados ao meio.
